Unhappy Best length & type of ski

What is the best type of ski for me?

Height 6ft

Weight 14st

Level Intermediate (ish)

Age 30 something

Fitness - not exactly at my peak

Like Groomed pistes, long cruising red runs

Dislike moguls & mashed up pistes (slightly dodgy knees)

What type of skis for all round piste conditions such as powder, groomed, icy & crud days?

What would be the best length & dimension of ski that would suit my ski level? (ie 112-67-98)

What type of bindings & would you reccommend personal professional mounting of bindings for balance (ball of foot?) or are the ready set up skis on ebay o.k.?

The reason why I am asking is that I am fed up with the crap sold in the ski hire shops that are out of balance with me (may be my ski ing but have had good skis on odd occasion) & they dont hold very well on ice?
