We are relocating from Bend OREGON which boasts superb trails systems including lots of racing, to Nuremburg Germany and are hoping for access to good XC skiing - anyone know of what we can expect in the area?

Pretty much in that area the ski is the limit when it comes to the variety of cross country skiing ventures in the area

There's tone of skiing in Bavaria! I put some details & links into this article (How to Nordic Ski in Germany | eHow.com - links at the bottom of the article) but I haven't yet found a comprehensive website about skiing in the region.

Since you've posted, have you found any good trails in your area?
