I know this is easier said than done but demoing skis is the best way to find what is the best ski for yo. After all you wouldn't buy a car without driving it first. That said, it sounds like you need an All Mountain ski for what type of terrain you are looking to ski. I'm partial to Rossignol so that's what I own myself. So, I suggest looking at the Rossignol Avenger 72. My other suggestions are the Apache series from K2 and the Raider, and the Atomic Smoke. All three are all mountain skis that would fit what you're looking for. As far as size my recommendation would be 165-170cm.
As far as bindings, I have used Marker for years and have had them on all my equipment. I would recommend the M10.0 CC SI bindings.
Hope this helps.
